The colorful and insanely tasty berry is associated with summer sunny days, which are so often lacking on cold winter and rainy autumn evenings.

Unfortunately, it’s practically impossible to get fresh strawberries out of season, and even if you meet fragrant berries on the shelves of the store, it is not so tasty, and the price is far from low.

But you can enjoy the aroma and taste of strawberries all year round. How? The answer is obvious: harvesting for the winter of strawberries. Jams, jams, compotes, jellies - from this berry you can cook many goodies that will not yield to the taste and benefits of fresh berries.

Strawberry winter preparations - general principles of preparation

There are so many recipes for strawberry preparations that it is simply impossible to list everything, but there are some general rules for all types that must be observed:

• Choose only ripe berries.

• Be sure to pick strawberries, spoiled and broken berries can ruin the taste and appearance of the workpiece.

• Remember to remove the sepals.

• When washing the berries, proceed carefully so as not to crush them. It is best to spread the strawberries in small portions on a colander, rinse, then transfer to a large clean kitchen towel for drying.

• Use only fresh sugar from the new bag for harvesting, so that crumbs and other rubbish are not accidentally included in the preservation with sand.

• Do not neglect sterilization of containers.

Basically, fresh winter berries and granulated sugar are directly part of the strawberry winter preparations, but besides these two ingredients you can add other products to your liking. Strawberries go well with all other berries: wild strawberries, cherries, cherries, gooseberries, raspberries, currants, blueberries, blackberries and others. The main thing is, if you decide to mix different berries, observe the proportions of berries and sugar, so that the workpiece turns out the desired sweetness: not too sugary and without sourness.

1. Preparations for the winter from strawberries: jam "Five minutes"

Ingredients:

• a kilogram of fresh strawberries;

• 800 grams of granulated sugar.

Cooking:

1. Carefully sort through the strawberries, discard all sluggish, broken and rotten.

2. Put the prepared berries in a colander, rinse, let the water drain.

3. Peel the washed and dried strawberries from green leaves, transfer to a pan.

4. Beat the berries with a hand blender until puree. If there is no blender, twist the strawberries in a meat grinder.

5. Pour granulated sugar into the aromatic mass, mix. Set the jam pan aside for 2-3 hours until the sand has completely dissolved.

6. After the allotted time, mix the mass again, put the pan on the stove.

7. Bring the jam to a boil, remove the resulting foam, simmer for five to seven minutes over low heat.

8. Put the prepared jam hot in sterilized jars. Roll up, and after complete cooling, put it in storage.

2. Strawberries for the winter: jam with mint and lemon

Ingredients:

• kilogram of strawberries;

• 800-900 grams of sugar;

• two to three sprigs of mint;

• one lemon.

Cooking:

1. After going through the berries, removing all the defective ones, put them in a colander and rinse.

2. Dry the strawberries and discard the sepals.

3. Put the prepared berries in a container in which you will make jam, pour strawberries with sugar. Leave the berries as they are for several hours so that the granulated sugar dissolves.

4. Rinse and chop the mint branches, squeeze the juice from the washed lemon.

5. Put the settled jam on the stove, bring to a boil.

6. Add lemon juice and peppermint.

7. Cook the jam for five minutes on a quiet fire, not forgetting to clean the foam.

8. Turn off the heat, cool the jam directly in the pan.

9. Once again remove the foam from the surface, mix.

10. Put in prepared sterilized jars, close tightly with lids.

3. Harvesting for the winter with strawberries: compote with the addition of cherries

Ingredients:

• a pound of strawberries;

• a pound of cherries;

• 2.3 liters of water;

• 400-500 grams of sugar.

Cooking:

1. Rinse both strawberries and cherries, after sorting through the berries.

2. Throw the berries in a colander so that all the liquid is gone.

3. Remove all branches, leaves.

4. Put prepared berries in a three-liter sterilized jar in layers: first, cherries, sprinkle it with a thin layer of granulated sugar, then strawberries, a layer of sugar.

5. Put the remaining sugar in a pan, fill with water. Bring the syrup to a boil.

6. Pour the prepared hot syrup into the berries in a jar.

7. Compote prepared according to this recipe does not need sterilization. You just have to roll up the cans, cool the compote, then put it away for storage.

4. Preparations for the winter from strawberries: jam

Ingredients:

• one and a half kilogram of berries;

• 1.2 sugars;

• 450 ml of water.

Cooking:

1. Prepare the strawberries: sort, peel, rinse and dry.

2. Pour water into a large pot, boil it.

3. Pour granulated sugar, mix.

4. Simmer the syrup for 3–4 minutes after dissolving the sugar.

5. Put prepared strawberries in syrup.

6. Continue cooking until the jam has settled to your desired consistency.

7. Place the hot strawberry workpiece in clean, sterilized jars.

8. Roll up the lids, turn the top upside down.

9. After the jam has cooled, you can put it in storage.

5. Harvesting winter strawberries: canned berries

Ingredients:

• 300 grams of fresh strawberries;

• 300 grams of fresh blueberries;

• a pound of granulated sugar.

Cooking:

1. Place the carefully peeled and washed strawberries in a suitable sized glass jar.

2. Add blueberries, also having previously sorted and rinsed it.

3. Sprinkle the granulated sugar over the berries.

4. Pour the prepared ingredients with boiling water. Water should completely cover the berries.

5. Cover the jar with a lid, put it in the oven, heated to 120 degrees.

6. Wait 20 minutes, carefully remove the container, roll up.

7. Cover the strawberry blanket with a blanket or blanket until it cools completely.

6. Preparations for the winter from strawberries: confiture

Ingredients:

• 400 grams of sugar;

• 1 kg of strawberries;

• litere of water;

• tablespoon "jellyfix".

Cooking:

1. Going through the harvested strawberries, remove all spoiled or damaged fruits.

2. Rinse the prepared berries, remove the sepals from them, and dry. Transfer to the pan.

3. Mix the jellyfix with two tablespoons of granulated sugar. Sprinkle a mixture of strawberries.

4. Pour in one liter of water, bring the mass to a boil. Stew on a quiet fire for five minutes, not forgetting to remove the resulting foam.

5. Pour the remaining sugar, mix.

6. Stew the confiture for about 15 minutes.

7. Pour the product in boiling form into sterilized jars. Roll up and wrap until cool.

7. Winter strawberry preparations: transparent jam with whole berries

Ingredients:

• 1 kg of berries;

• 1 kg of granulated sugar;

• 5 g of citric acid.

Cooking:

1. Sort out the freshly picked strawberries. Remove leaflets, stalks. Rinse and dry.

2. Sprinkle all the berries in layers with sugar.

3. Remove the mass for 5-6 hours in the refrigerator so that the berries release juice and the sugar completely dissolves.

4. Expose the settled mass to a low fire, after thoroughly mixing it, simmer after boiling for about 5 minutes, turn off the gas.

5. After 20 minutes, mix the mass and repeat the procedure with boiling and shelving two more times.

6. For the third time of melancholy 2 minutes before turning off the fire, add citric acid.

7. Cool the prepared jam and roll it into sterilized jars.

8. Preparations for the winter from strawberries: jam from berry mix

Ingredients:

• 500 g of strawberries;

• 500 g of strawberries;

• 750 g of sugar.

Cooking:

1. Thoroughly sorting and washing strawberries and strawberries, pass everything through a meat grinder, or chop with a blender.

2. Transfer the mass to a saucepan, cook in your own juice over low heat after boiling for 2-3 minutes.

Strawberry winter preparations - small tricks of experienced chefs

• To prevent the berries from losing shape, it is best to store them in a refrigerator or a cool, dark place.

• To prevent jam or jam, add to the blank before pouring a couple drops of lemon juice into a liter jar.

• To prevent the jam from becoming moldy, sprinkle it with a thin layer of icing sugar before closing the jar.

• So that the conservation of strawberries does not turn cloudy, do not forget to remove the foam during boiling.

• Roll strawberries only in sterilized dry jars, otherwise preservation will quickly deteriorate.

• Do not forget about the sterilization of the lids, it is enough to boil them in water for several minutes.

• You should not pack blanks for the winter from strawberries, and from any other berries and fruits, in plastic packaging. Such material emits bisphenol-A, which is harmful to the human body.
