2. Wash the eggplant, wipe with a paper towel, remove the stalk. Cut into ringlets, generously sprinkle them with salt, leave for 25 minutes to remove the bitterness. If this is not done, the dish will be hopelessly spoiled. Then we wash the "little blue ones" again and dry.

3. Eggplants are combined with different mushrooms, but mushrooms are especially good. Wash the mushrooms, dry and cut into plates.

4. We grind hard cheese on a grater, and soft cheese - cut into thin plates.

5. We prepare other components (depending on the recipe). Bell peppers, potatoes, onions, carrots, meat are perfectly combined with "blue ones".

6. Do not forget about spices. Eggplant "loves" parsley, sage, mint, dill, basil, rosemary, oregano.

7. We take a baking dish with high sides and grease with sunflower or olive oil. We form a dish: we lay out all components in neat layers and season with spices. If desired, pour the mass with sour cream or mayonnaise and send to the oven for 35-40 minutes (temperature - 190-210 ° C).

8. We take out the form from the oven and sprinkle with plenty of cheese on the masterpiece. Then we send it to the oven for another 10 minutes.

INGREDIENTS:

• 4 eggplants;

• 300 g of cheese;

• 600 g of mushrooms (champignons);

• 4 onions;

• 1 tbsp. sour cream (preferably homemade);

• 40 ml of olive oil (you can use sunflower);

• salt;

• spices;

• greenery.

COOKING

1. "Little blue ones" are washed, wiped and cut into ringlets (about 1 cm thick). Put in a bowl and sprinkle with salt. After 20-25 minutes, wash the eggplant and dry it, spreading it on a towel.

2. Cheese cut in half. We cut one part with thin plates, and grind the second one.

3. Wash the mushrooms, dry and cut into thin plates.

4. Bulbs are peeled, washed, wiped with napkins and cut into rings.

5. Rinse dill or parsley, dry, chop.

6. In the bowl, mix sour cream, herbs and spices.

7. Lubricate the mold with oil. We form a dish: put all the ingredients: eggplant, onion, cheese and mushrooms. Pour the ingredients with sour cream.

8. Turn on the oven, select a temperature of 210 ° C and send the form with the future culinary masterpiece to bake for 35 minutes.

9. We take out the form, generously crush the eggplant with chopped cheese and again send the pan to the oven (3 minutes is enough).

INGREDIENTS:

• 4 "little blue ones";

• 700 g of champignons (you can use other mushrooms);

• 2 tomatoes (choose large and elastic vegetables);

• 300 g of soft cheese (brie, camembert, feta or gorgonzola);

• 100 g of hard cheese;

• 4 cloves of garlic;

• 40 g of vegetable oil;

• salt;

• spices;

• greenery.

COOKING

1. Rinse the eggplants, dry them with napkins, cut them into rings, put them in a bowl, and fill them with salt. After half an hour, when the bitterness leaves the vegetable, we wash it, dry the rings, spread them on a towel.

2. Wash mushrooms, dry and cut into thin plates.

3. Wash the tomatoes, remove the ponytails, wipe with napkins and cut into rings.

4. Peel the garlic, rinse, dry and chop.

5. We cut soft cheese into thin plates, and hard cheese we grind on a grater.

6. Rinse the greens, dry and finely chop.

7. Take the form and grease with olive or sunflower oil. We spread the ingredients in the following sequence: "blue", tomatoes, soft cheese, garlic, mushrooms. Season each layer with spices.

8. We send the pan to the oven for 40 minutes (temperature 200-210 ° C).

9. After 40 minutes, we take out the form, generously cover the vegetables with chopped hard cheese and send to the oven for 5 minutes.

INGREDIENTS:

• 3 "little blue ones";

• 400 g of pork, beef or minced chicken (who loves what);

• 600 g of hard cheese;

• 700 g of any mushrooms;

• 40 ml of sunflower oil;

• 1 tbsp. tomato juice;

• salt;

• along a bunch of dill and basil.

COOKING

1. Wash the eggplants, remove the tail and dry. Cut the "little blue" into rings with a thickness of 1-2 cm, put in a bowl and cover with salt. After half an hour, wash my vegetable and berry again and dry it.

2. Pour oil into a pan and add minced meat. Fry it for about 5 minutes. Add tomato juice and season with spices. Mix, cover and simmer for 5 minutes. Pour the minced meat into a separate container and add finely chopped greens.

3. Cheese cut in half. We grind one part, and cut the other into thin plates.

4. Mushrooms, if necessary, cleaned, washed and dried. Then we cut the plates.

5. Take a baking dish and grease with oil. We lay the ingredients in layers in the following order: eggplant, minced meat, cheese and mushrooms. If desired, lightly season each layer with spices, but remember that they are already in the meat. We put the baking sheet in the oven for 35 minutes.

6. After 35 minutes, take out the form, crush the dish with cheese and send it back to the oven (10 minutes is enough).

INGREDIENTS:

• 3 "little blue ones";

• 600 g of any mushrooms;

• 800 g of chicken;

• 350 g of soft cheese (can be replaced with processed cheese);

• 150 g of hard cheese;

• 3 onions;

• 4 cloves of garlic;

• 40 ml of sunflower oil;

• Art. sour cream;

• tsp mustard;

• salt.

COOKING

1. Wash the “little blue ones”, remove the tail, wipe with napkins, cut into ringlets, put in a bowl and fill with salt to remove the bitterness. After half an hour, thoroughly wash the eggplant and dry it.

2. Mushrooms, if necessary, cleaned, washed, dried, spread on a towel. Then we cut into thin plates.

3. Wash the chicken fillet, dry it and cut it into strips.

4. Shred soft cheese, and hard - grind it on a grater.

• 2 eggplants;

• 600 g of mushrooms (any);

• 5 bell peppers;

• 10 chicken hearts;

• processed cheese;

• 250 g of hard cheese;

• half a glass of ketchup;

• 40 ml of olive oil;

• salt;

• spices;

• a bunch of greenery.

COOKING

1. "Little blue ones" are washed, dried, cut into rings, put in a bowl and covered with salt. After half an hour, wash the eggplant and dry.

2. Wash the mushrooms, clean, if necessary, dry, cut into thin plates.

3. Rinse the pepper, remove the stalk and seeds, dry and cut into strips.

1. We use only medium-sized young eggplants.

2. We process the "little blue" salt, otherwise the dish will be bitter.

3. Do not squeeze the eggplant, but simply drain the water and rinse.
