• It is not necessary, even to the festive table, to prepare snacks from the delicacies, they can be budget ones. The main products, the presence of which allows you to cook a delicious cold appetizer: cheese, mushrooms, fresh vegetables, crab sticks, liver, eggs. It is only important that they are high-quality and fresh.

• The main requirements for any appetizer are the small size of the cut or the ability to serve the dish in portions, and, of course, the effective design. The recipes for delicious snacks collected in the article do not require additional serving, the dishes look attractive anyway. Profiteroles are conveniently pricked on a skewer, and the liver cake and stuffed herring are cut into portioned portions before serving.

Recipes of delicious cold snacks: "Raffaello"

A simple recipe for a quick cold appetizer of eggs, hard mild cheese and crab sticks. Boiled eggs and cheese are chopped on a fine grater, and then mixed with mayonnaise and garlic. An appetizer is made in the form of balls rolled in chips from crab semi-finished products, which makes them similar to Raffaello candies.

Ingredients:

• four eggs, selected;

• 200 gr. hard fresh cheese;

• garlic;

• 200 gram packaging of crab sticks;

• half a glass of mayonnaise;

• fresh leaves of a young salad.

Cooking method:

1. Boil hard boiled eggs: dip in cold water, add a spoonful of coarse salt, bring to a boil. Then, slightly lowering the heat, cook the eggs with a slight boil for ten minutes. We drain the hot water, and place the pan with eggs under a stream of cold. After cooling, peel the shell and rinse. Sometimes squirrel shell fragments remain on the squirrel, they are washed off with water.

2. After washing with cool water lettuce leaves, lay out on a linen towel to dry.

3. Rub the eggs on a fine grater, and grind the cheese on it. Add mayonnaise, crush three small garlic cloves. Sprinkle with a small amount of salt and mix thoroughly.

Everyone knows what eclairs are, but not everyone is familiar with profiteroles. Choux pastry blanks can be filled not only with cream, if you put unsweetened filling in them, you can get a delicious cold snack. We offer to prepare mushroom profiteroles - a wonderful decoration of any table, and at the same time a light snack.

Ingredients

In the dough:

• two glasses of water and flour;

• 200 gram pack of cream margarine;

• 0.5 tablespoons of evaporated salt;

• eight eggs.

To the filling:

• fresh medium-sized champignons - 800 gr.;

• two onions;

• two eggs;

• 150 gr. cream or 20% sour cream;

• processed non-flavored cheese - 200 gr.;

• 50 gr. sweet cream butter.

Additionally:

• fresh garden greens;

• refined sunflower oil.

Cooking method:

1. First things first, you need to bake blanks for profiteroles. After pouring water into the pan, put salt and margarine, put on a moderately intense heating. As soon as the margarine is completely dispersed, stirring the water with a whisk in a circle, pour in the sifted flour. After breaking all the lumps, boil the flour mass for about a minute, stirring does not stop. Pour the egg into the hot base, carefully rub with a spoon. Pour in another egg and again interfere well with it, thus introducing all eight eggs. Do not lay all the eggs at once, the profiteroles will be tough. The finished dough should be viscous and smooth, with a slight glossy sheen.

2. Rub the baking sheet with ghee margarine or vegetable oil. Poking the dough with a tablespoon, put it on the roasting pan. We spread out, stepping as wide as one finger, apart, during baking the dough rises well.

3. Place the baking sheet in a preheated oven, bake the workpiece until a tender blush, about 10 minutes. When baking, the oven door is strictly forbidden to open, otherwise the dough will settle, the heating temperature is 180 degrees.

4. We lay the blanks on a large dish in a row so that they do not crush each other.

5. While the basis of profiteroles cools, prepare the mushroom filling. Finely chop the onion with a thin knife, cut the mushrooms into small cubes.

6. In refined oil, fry the onion until golden brown. Add the mushrooms and continue cooking until the moisture protruding from the mushrooms evaporates. Pour cream (sour cream) into the pan, pepper a little and add. Stew mushrooms for three minutes, then mix them with cream cheese.

7. Beat two eggs, introduce the egg mass into the mushroom filling as soon as the cheese melts. Stir thoroughly, transfer from pan to plate, cool.

8. In the blanks on the side, make a wide cut and fill the void with mushroom filling.

9. Put the mushroom profiteroles on a plate, before serving, decorate with greens, large leaves.

Delicious cold appetizer recipes: stuffed herring

Herring is so familiar in our kitchen that it is not easy to imagine a festive table without it. This is a kind of classic, traditional dish. However, serving the fish in the form of a regular cut is pretty commonplace. We offer a recipe for a delicious cold appetizer of stuffed herring.

Ingredients:

• two large carcasses of light-salted herring;

• a large boiled carrot;

• two medium-sized onions;

• 150 gr. fat mayonnaise;

• branches of dill;

• two boiled eggs;

• granular gelatin - 15 g.

Cooking method:

1. Gently clean the herring. First we gutted the carcasses, remove the skin and cut it into fillets. Be sure to inspect the fish meat for bones!

2. We cook boiled carrots in small cubes. If you like bell pepper, replace half of the specified amount of carrots with it, it is good that these are small peppers of two colors. They, like carrots, will need to be finely chopped.

3. Remove the eggshells, wash and cut into small cubes. Finely chopped onion and dill separately.

4. Soak gelatin. Pour granules with cool water so that it covers them a little, and leave for 15 minutes. Then add two tablespoons of warm water, stir. Combine the gelatin mass with mayonnaise.

5. Put the chopped ingredients in one bowl and mix with gelled mayonnaise. Seasoning the filling with pepper, add salt and remove for a while in the cold.

6. We divide the fillet into "left" and "right" halves, for each roll you will need two left or right parts.

7. We spread the cling film on the table, put one herring fillet on it, with the outer side down. We lay out part of the chilled filling and cover with another filet. Note! To get a beautiful dish, the second part of the herring must be taken from another carcass. We put it on the bottom, observing the rule "tail to tail", so the abdomen of the upper fillet will lie on the back of the lower. Tightly wrapping the film, we cool for two hours in the refrigerator. We stuff the second fish in the same way.

8. Before serving, we cut a very sharp knife into slices, one and a half centimeters thick. Serve, carefully laid out on a plate in the form of a fan, arrange, with fresh herbs.

Delicious Cold Appetizer Recipes: Liver Cake

Snack cake is prepared from beef or pork liver, turkey or chicken liver is not recommended, the dish will have a completely different taste. Grind the liver with a meat grinder, and then mix it with eggs, milk and flour. Do not add more than the specified rate of flour, otherwise the liver taste of the snack will be lost.

Ingredients:

• a pound of pork or beef liver;

• half a glass of milk;

• raw eggs - 5 pcs.;

• boiled egg;

• five tablespoons of flour;

• two large onion heads;

• one medium-sized carrot;

• highly refined vegetable oil;

• 250 gr. mayonnaise without mustard, home-made ,.

Cooking method:

1. Rinsing the liver with water, remove all ducts, and cut into pieces. Twist the liver in a meat grinder twice.

2. Pour all five eggs into the hepatic mass, add the sifted flour, add a little salt and pepper. Stir the liver dough until smooth.

3. Pouring a little vegetable oil into the pan, warm well at a moderate temperature. Poking the dough with a small scoop, pour it into the pan and slightly shake it to spread evenly. Frying the underside of the cake until golden, turn over and fry the other. Turn over gently, taking a wide spatula, otherwise the workpieces may burst. Ready-made cakes are carefully collected in a pile.

4. In the same pan, pour two tablespoons of oil, warm over medium heat. Finely chop the onion with a knife, put it in a pan. We pass onion slices until transparent, add coarsely grated carrots and continue cooking until soft. Cool vegetable frying, combine with mayonnaise.

5. Place the liver cake on a plate and apply a thin layer of mayonnaise dressing on it, cover with the next pancake and squeeze a little. We cover mixed vegetables with mayonnaise and it. In this way we collect the whole cake.

6. We decorate the snack liver cake with grated egg and put it in the refrigerator for a couple of hours for impregnation.

Delicious Cold Korean Spicy Tomatoes Recipes

In the season of vegetables, salads from them are necessarily served on the table. Pay attention to the recipe for delicious Korean-style tomato appetizer. It is advisable to cook a spicy salad of tomatoes per day, since they must have time to marinate in a spicy marinade.

Ingredients:

• a kilogram of fresh tomatoes;

• two fruits of sweet pepper;

• garlic;

• a small hot pepper;

• 50 gr. vegetable oil;

• table vinegar - a quarter cup;

• a spoon of salt;

• a bunch of green dill;

• 50 gr. sugar.

Cooking method:

1. Having disassembled a large head of garlic into the prongs, peel. From the bell peppers, select the seeds and cut the flesh. Wash the garlic, pulp of sweet and hot pepper with water. Whether or not to remove seeds from the hot pepper is up to you, but keep in mind that it is they that give the main pungency. Grind prepared vegetables with a meat grinder.

2. Wash the tomatoes and herbs. Cut the tomato into slices, remove the seal at the place of attachment of the stem. We chop dill finely.

3. In the previously prepared vegetable mass, pour sugar, pour vinegar and vegetable oil, salt. After adding dill, mix well.

4. A third of the tomato slices are laid out evenly, along the bottom of the enameled pan and pour over the vegetable mass. Then again we lay a layer of tomatoes and water them. We form the third tomato layer and pour out the rest of the vegetable mixture.

5. We send a snack of tomatoes for a day in the refrigerator. If the tomatoes were dense, a couple of times the appetizer can be mixed to better salted.

Recipes of delicious cold snacks "Sesame balls from cod liver"

Another recipe for a delicious cold appetizer in the form of balls. The base is prepared from boiled potatoes, cod liver, eggs and cheese. Balls roll in fried sesame seeds. The appetizer is very tender and delicious - a great alternative to cod liver salad.

Ingredients:

• two boiled large, non-friable potatoes;

• a can of "Cod Liver" canned food, standard capacity - 230 gr .;

• 50 grams of cheese;

• two tablespoons of soybean concentrate;

• boiled eggs - 2 pcs.;

• a bunch of fresh parsley or dill;

• three spoons of sesame seeds.

Cooking method:

1. In a dry frying pan, lightly fry sesame seeds, pour it into a spacious plate, cool.

2. Open the canned food, decant the oil, remove the spices and put the liver on a plate. Knead with a fork, send to a bowl.

3. Grate potatoes with a coarse grater, and cheese and eggs with a fine grater. We spread the crushed components to the liver. Add chopped greens. Pour in soy sauce and mix thoroughly.

4. With moistened hands, we form small balls from the resulting mass and roll them in sesame.

5. Put the appetizer on a plate, arrange, covered with sprigs of greenery. Another serving option: put the balls in small paper tins, in which cap-cakes are usually baked, stick into each skewer and place on a serving dish.

• Use greens for decoration, but do not abuse it. Almost everyone likes dill, parsley, lettuce, but cilantro and basil are best served separately, such greens are for everybody.

• Do not use a lot of mayonnaise in cold appetizers, depending on the components, try adding garlic and pepper. Cold snacks are designed to increase appetite before serving hot dishes, and not to satisfy hunger.

• Cod liver canned foods are produced by different factories and to different standards. For our purposes, two types are suitable - a high-quality, expensive product from a natural liver, dense, drenched in olive oil and a very affordable paste, sold under the brand name “Cod liver, in a seaside way”. The second type of canned food has a lower fat content, which allows you to cook lighter dishes and even add to the children's diet. The simplest example of a recipe for a delicious cold appetizer from such canned foods: mix the paste with the yolks of boiled eggs, add salt, pepper a little and add a little garlic. Stuff the eggs and serve, garnishing with a drop of mayonnaise and a leaf of parsley.
