Thanks to the delicate taste and delicious aroma, buns and cinnamon rolls from yeast dough are popular with both adults and children. Of course, such buns can be bought in stores, bakeries, culinary shops, but homemade products are much tastier.

Yeast Cinnamon Rolls - General Principles

Dough or fresh yeast, flour, eggs, milk or water are standard in the test. The yeast is pre-mixed with milk, sugar and a handful of flour, then the remaining ingredients are added to the dough according to the recipe.

Knead the soft dough, which is removed to the side before raising. The dough is crushed and again removed until the next rise. The procedure can be repeated several times. Buns of any shape are formed from the finished dough, cinnamon powder is used as a filling or topping.

1. Yeast dough cinnamon rolls

Ingredients for the dough:

• instant yeast - 1 pack;

• flour - 8 glasses;

• salt - 10 g;

• 2 handfuls of sugar;

• milk - 1 large mug;

• a couple of eggs;

• creamy margarine - 1 pack.

For sprinkling:

• sugar, cinnamon powder - 2 handfuls.

For greasing buns:

• margarine - half a pack;

• 1 egg.

Cooking method:

1. Dissolve yeast with sugar in a cup of warm milk.

2. Pour the sifted flour, salt into another bowl, add the slightly melted margarine, chop with a fork a little, beat the eggs, stir well.

3. Pour in the foaming yeast mixture, knead the dough, close the lid and place it closer to sunlight for a few minutes.

4. After the second raising, divide the dough into two parts and roll into thin cakes.

5. Melt margarines in a pan, cool and grease the layers.

6. Cinnamon mix with sugar, sprinkle evenly layers.

7. Roll the dough roll, cut into small pieces.

8. Put the resulting buns on a sheet of parchment for a short distance and put in heat to rise.

9. Lift the buns with eggs, sprinkle with sugar again and bake in the oven at a moderate temperature for 30 minutes.

Ingredients:

For the dough:

• a piece of butter;

• 200 ml of milk;

• a pinch of sugar;

• instant yeast - 1 pack;

• a couple of eggs;

• flour - 5 glasses.

Filling:

• brown sugar - 100 g;

• 20 g of cocoa and cinnamon powder;

• ginger powder - 15 g.

Cream:

• soft cream cheese - a small piece;

• 150 g of powdered sugar;

• milk - 30 ml.

For lubrication:

• butter - a small piece.

Cooking method:

1. Put a piece of butter in a pan, pour milk, sugar, slightly salt and melt over moderate heat, remove from heat and cool.

2. In a small mug with warm water, dissolve the yeast with sugar and place it closer to sunlight until a white froth appears.

3. Pour the dissolved yeast into the butter and milk mixture.

4. Add the eggs, stir well and slowly pour the flour, mix the mass first with a mixer, and then with your hands.

5. With good light movements, knead the dough on the table, sprinkled with flour to a gentle elastic state.

6. Put the well-kneaded dough into the bowl, close the lid and leave for a few minutes to rise.

7. After the third rise of the dough, divide it into several parts, roll into thin cakes.

8. Oil the layers, sprinkle with cinnamon, cocoa, brown sugar and ginger.

9. Roll tightly.

10. Cut into small pieces, approximately 5 cm.

11. Put the buns on a sheet of parchment 1 cm apart from the durg, let it rise a little.

12. Put in a red-hot oven and bake for half an hour at moderate temperature.

13. Prepare the cream: in a cup, beat with a mixer the powdered sugar, cheese and milk for several minutes.

14. After baking the buns, remove from the oven and grease with cream.

3. Vanilla cinnamon rolls from yeast dough

Ingredients:

• instant yeast - half a pack;

• a couple of eggs;

• butter - a small piece;

• 300 ml of milk;

• 150 g of sugar;

• salt, vanillin - 10 g each;

• flour - 600 g;

• cinnamon powder - 30 g.

Cooking method:

1. In a metal mug, heat the milk, pour yeast into it, a pinch of sugar and a handful of flour, mix well and put in the sunlight for a few minutes.

2. Melt the butter in a pan.

3. In a dry bowl, beat the eggs with a whisk, add a little sugar, vanillin, salt and pour oil, mix.

4. Pour dough into the prepared mixture, add more flour in several stages, knead the dough thoroughly.

5. Put the bowl with the dough into heat.

6. Roll out a thin cake from the dough, grease with butter, sprinkle with cinnamon, mixing it with sugar.

7. Roll the cake without a tight roll, place the seam down, cut at an angle of 30 degrees.

8. From the cut pieces, form buns, put them on a baking sheet lined with parchment, leave for half an hour to rise.

9. Lubricate the buns with raw yolk and place in a hot oven, bake a little less than half an hour.

10. Cool the finished buns on a special wire rack.

4. Sugar glazed yeast dough cinnamon rolls

Ingredients:

• instant yeast - 1 pack;

• butter - 1 pack;

• 150 g of sugar;

• a couple of eggs;

• milk - 300 ml;

• flour - 850 g;

• salt - 15 g.

For glaze:

• 200 ml of milk;

• powdered sugar - 150 g.

For sprinkling:

• 150 g of brown sugar;

• 2 tbsp. tablespoons of cinnamon powder.

Cooking method:

1. Dissolve the yeast in half a glass of warm water, put in heat for several minutes.

2. In a small metal container, melt a piece of butter, cool.

3. Pour the butter into the dissolved yeast, add sugar, eggs, milk, flour, slightly salt, knead the dough with your hands.

4. Cover the dough with a towel and leave it warm for 30 minutes.

5. Roll the dough into a thin cake, grease with butter and sprinkle with brown sugar mixed with cinnamon.

6. Roll the layer in the form of a roll and cut into pieces.

7. Put all the pieces on oiled parchment, cover with a plastic bag and leave overnight.

8. The next morning, remove the bag and place the buns in a hot oven, bake for half an hour at a moderate temperature.

9. Remove the baked buns from the oven, cool on a wire rack.

10. Prepare icing sugar: pour milk into a cup, add half the norm of powdered sugar, stir well.

11. Remove the baked buns from the oven, pour one part of the glaze, and pour the powdered sugar into the second part, stir and pour the buns again.

5. Cinnamon rolls from yeast dough with ginger root

Ingredients for the dough:

• 1 pack of instant yeast;

• milk - 150 ml;

• sugar - 1 handful;

• 600 g of flour;

• margarine - half a pack;

• 1 egg;

• a pinch of salt;

• ginger root - 1 piece.

For sprinkling:

• sugar, cinnamon - 30 g each

For greasing buns:

• 1 egg.

Cooking method:

1. In a metal mug, heat the milk, pour in the yeast, a little flour and sugar, set aside for a few minutes until bubbles form.

2. Pour in the remaining flour salt, the remaining sugar, grated ginger root, pour in the dough, butter and add the egg, knead the dough.

3. Cover the dough with a plastic bag and give it a little time to rise.

4. Roll a thin cake, cut circles with a glass.

5. Lay all test circles so that each circle half covers the other.

6. From all circles, roll a roll, cut into two halves to make “flowers”.

• milk - 300 ml;

• 1 egg;

• salt - 10 g.

For greasing buns:

• 1 egg.

Cooking method:

1. In warm milk, dissolve the yeast with sugar, add a little flour, close the lid and insist until bubbles appear.

2. Break the egg into the dough, add half a pack of melted chilled butter, the remaining flour, slightly salt, knead the dough and put in heat to raise.

3. Hold raisins for 3 minutes in boiling water.

4. Roll out a thin cake from the finished dough, grease it with butter, sprinkle with sugar mixed with cinnamon, put the swollen raisins on top.

5. Roll up.

6. Cut the roll into pieces, put them on a baking sheet with parchment cut up, grease with a raw egg, sprinkle with sugar.

Yeast dough cinnamon rolls - tricks and tips
