Fricasse is an old dish that came to us from France. It is a mixture of meat and vegetables, fried and then stewed in their own juice or pour. In a literal translation, the word "fricassee" means only "mixture", "all sorts of things." Such food was very popular in the countryside among the middle hands of farmers and poor citizens, and later spread to a noble class.

Chicken fricassee with mushrooms: principles of preparation

This dish does not require any special skills and even an inexperienced chef can cope with it. And it takes a little time. You can cook chicken fricassee with mushrooms with the addition of almost any vegetables:

Potatoes

Zucchini;

Onions;

Beans

Carrots;

Peas

· etc.

This dish is unpretentious with regard to seasonings: all spices combined with meat will be appropriate here.

The cooking technology is very simple:

1. The meat is slightly fried in a small amount of vegetable oil.

2. Separately or together with chicken, chopped onions are fried.

3. After this, the mushrooms are laid out, also fried over high or medium heat. Spices, peppers and other hot seasonings are added to the dish (everything except garlic, the taste of which is lost during a long heat treatment, which is why you need to put it at the very end).

4. An almost ready mixture is poured with cream, sour cream or specially prepared white sauce and simmers over low heat for 2 to 10 minutes.

Chicken fricassee with mushrooms: how to cook a classic recipe

An old French recipe for this dish is distinguished by an unusual tenderness of taste and soft meat melting in your mouth.

Ingredients:

600 g of breast;

300 g of champignons;

200 ml low-fat cream

· 2 eggs;

300 g of water;

· 2 tbsp. tablespoons of flour;

· And as much - lemon juice;

· A little butter;

· As well as salt and any spices as you wish.

Cooking method:

1. Cut the chicken into pieces.

2. While stirring, fry in oil at maximum heat for several minutes until the meat turns white.

3. Add the mushrooms, season with lemon juice and, not forgetting to stir, fry everything together first on a strong, then on a slightly reduced fire. The liquid from the mushrooms should evaporate.

4. Add salt and spices to the pan, pour water and half the cream. Then cover the dish with a tight lid and let it sit for 5 to 10 minutes.

5. In the meantime, separate the yolks from the eggs, mix them thoroughly with cream, pouring the resulting sauce into an almost ready fricassee, let it simmer for a few more minutes.

Chicken fricassee with mushrooms: a step-by-step recipe with sweet pepper and mushrooms

This dish, due to its delicate taste, will decorate not only an ordinary dinner, but also a festive feast.

Ingredients:

· 2 - 3 chicken breasts (about 500 g);

· 300 g of fresh champignons;

· 1 large Bulgarian pepper;

· 2-3 cloves of garlic (you can and more if you like spicy);

· 2 tbsp. tablespoons of odorless vegetable oil;

100 g of thick cream or cream-fresh;

· And 200 g of cream with a fat content of not more than 20%;

· Fresh parsley - a bunch or a little less;

· As well as black pepper powder and salt.

Cooking method:

1. First, you need to prepare the meat for frying. Cut the breasts into small cubes, fold them into a deep bowl and sprinkle with spices. Send finely chopped greens there and mix everything thoroughly.

2. Season the meat with cream fresh and send to a cold place for a couple of hours.

3. When the chicken is infused, go in for vegetables. Chop mushrooms with thin plates, and bell pepper in small cubes.

4. Fry the pepper in oil until it is podzolot (it will take about 5 minutes).

5. After this, put the mushrooms and meat in the pan along with the dressing. Stir and fry over medium-high heat for 10 to 15 minutes. It is necessary that the mushrooms are fried and soft.

6. After that, fill everything with non-fat cream, cover and simmer for 10 minutes on the smallest fire.

Once in Spain, chicken fricassee with mushrooms underwent some changes; his taste, however, only benefited from this!

Ingredients:

500 g of chicken;

400 g of mushrooms;

· 2 large onions;

· 400 g nonfat (preferably 10%, not more) cream;

· A small piece of butter;

· 5 tbsp. tablespoons of sunflower oil;

2-3 garlic cloves;

· 0.5 teaspoon chili seasoning;

· 2 tbsp. tablespoons of flour;

· As well as some salt, black pepper and mushroom seasoning.

Cooking method:

1. Cut all the ingredients: meat - into cubes, mushrooms - into plates. Chop the onion as thin as possible, preferably in half rings. Chop the garlic in a garlic press and mix with chili.

2. In a hot skillet, mix both types of oil and fry the small chicken fillet in it over high heat. This will take 1 to 2 minutes.

3. After that, reduce the heat a little, put the onions to the meat and fry, stirring, until it gets a golden hue.

4. Add mushrooms to the pan. Stir the mixture and simmer in your own juice for 5 to 7 minutes.

5. When the mushrooms become soft, salt and pepper the dish, add the mushroom seasoning and 2 tablespoons of sifted flour. And, having mixed, fry over a large fire.

6. Put the garlic mixture in the pan, pour the cream over everything and let it boil. You do not need to stew, otherwise the dish will lose part of its piquant taste. Transfer Spanish chicken fricassee with mushrooms to a beautiful salad bowl and serve!

Chicken fricassee: how to cook a healthy dish with mushrooms and beans

The peculiarity of this dish is that it contains almost all the trace elements and vitamins necessary for the human body. It takes no more than 40 minutes to cook, while it can be served as a second hot dish or as a cold snack.

Ingredients:

A pound of chicken breasts;

Onions (1 large onion or two small);

· 200 g of fresh (freshly frozen) mushrooms;

150 g of green beans;

· 170 g of thick sour cream;

· 2 tbsp. tablespoons of soy sauce;

· A little vegetable oil;

· As well as salt and seasonings as you wish.

Cooking method:

1. Finely chop the fillet and fry in oil for 20 minutes over low heat. If you plan to use seasonings for meat, you need to add them at the end of this period, when the chicken is fried.

2. Chop the mushrooms and onions in small pieces, put them in the meat and cook together for another 2 to 3 minutes. If the mushrooms were frozen, they must first be filled with warm water and wait until they become soft.

3. Pour the chopped bean pods over the mixture. Unlike mushrooms, they must be frozen. Add salt.

4. Pour all the soy sauce, mix and cover with a tight lid, leave on low heat for 5 minutes. Note that the dish should be stewed, not fried, so you can add a little water.

5. After this, add chopped garlic, pour sour cream and, having mixed, wait for boiling. A delicious and nutritious lunch is ready!

Chicken fricassee with mushrooms and corn: how to quickly prepare a delicious dinner

This dish is rather laborious, but its unusual taste will not leave indifferent even the most picky gourmets.

Ingredients:

· 1 chicken carcass;

· 200 - 300 g of mushrooms (you can and more, depending on your preference);

Onion: 1 small onion and 1 medium size;

· A few cloves of garlic;

· 100 g sour cream;

· 30 g of sunflower oil;

· Salt with spices;

· And 1 can of canned sweet corn.

Cooking method:

1. Cut the carcass; for the dish you only need the breast and trim from the ridge. The rest of the meat can be put into the freezer.

2. Pour the ridge and the skin with a liter of water, add the peeled whole onion and cook for 40 minutes.

3. Prepare all products for chicken fricassee with mushrooms. Cut the chicken breast and mushrooms into small pieces, chop the onion into thin half rings. Add chopped garlic in a separate container: it will be needed closer to the end of the process.

4. Pour oil into a cauldron or pan - a little, so that it covers the bottom with a thin layer.

9. After this, fill everything with the prepared broth, remove the fire to a minimum and, without covering, simmer for 10 minutes.

10. And the last step: add sour cream with seasonings to an almost ready dish, let it boil and turn it off after 2 minutes. It is best now to cover the cauldron with a tight lid and let the chicken fricassee "reach" 10 - 20 minutes. But you can immediately serve it.

Chicken fricassee with zucchini and mushrooms: how to quickly cook chicken fricassee in the microwave

This unusual dish with a spicy sweet and sour taste is cooked very quickly. Moreover, its taste is so high that it can be served with a festive feast and even used to receive important guests. And most importantly, when cooking it, zucchini rich in vitamin do not lose their beneficial properties!

Ingredients:

500 g chicken;

125 ml of chicken stock;

· 2 small carrots;

· 1 medium sized zucchini;

100 - 150 g of champignons;

· 1 tbsp. a spoonful of cream or sour cream;

100 g of white wine;

· Salt, ground black pepper and seasonings to choose from;

· 1 teaspoon of balsamic vinegar;

· A heat-resistant glass container with a tight lid will also be required.

Cooking method.

1. Cut the chicken into small pieces.

2. Fold it in the selected dishes, fill with broth and send to the microwave for 8 minutes. Set the device's operating mode to maximum.

3. Pull the meat out of the oven, mix and put to stew for another 8 minutes.

4. Meanwhile, you need to prepare the vegetables. Chop the zucchini with small bars or cubes. Rub the carrots coarsely. It is better to cut mushrooms with plates.

5. Using a slotted spoon, remove the meat from the broth and put it in another container. And in its place send the carrots. It needs to be cooked for about 7 minutes, no more.

6. To the softened carrots add the remaining vegetables and seasonings; pour the wine there too. And put in the microwave for another 8 minutes. For chicken fricassee with mushrooms and zucchini, it is better to use real balsamic vinegar. If you could not find this seasoning, you can replace it with apple vinegar and some sweet and sour seasoning - for example, paprika.

7. Meanwhile, prepare the sauce in the pan: pass the flour over medium heat, add a little broth to it and stir.

Chicken fricassee with mushrooms: tips

In order for the chicken fricassee with mushrooms to turn out tasty and not take up much time, you can use some tricks:

· Although traditionally chicken fricassee with mushrooms is prepared from breast, any parts of the chicken carcass are suitable for the dish. To do this, remove the skin from the meat and separate it from the bones.

· The ideal mushrooms for this dish are champignons, oyster mushrooms or mushrooms. But if they are absent, honey mushrooms, butterfish, and mushrooms will do. They just have to fry a little longer.

· If you decide to add wine to the prepared meat, use white or dry varieties.

· Any canned foods added to fricassee must be fried or stewed. Without heat treatment, they will ruin the taste of the dish.
